    These soft biscuits are great for kids birthday parties - they are easy to hold and nice and soft in the centre. Set up a range of coloured icing and bowls of sprinkles and let them decorate until their heart's content!

    Makes: 5 dozen biscuits

    • 225g butter, softened
    • 225ml vegetable oil
    • 200g caster sugar
    • 120g icing sugar
    • 2 eggs, lightly beaten
    • 1 teaspoon vanilla extract
    • 550g plain flour
    • 1 teaspoon bicarbonate of soda
    • 3/4 teaspoon cream of tartar

    1. Preheat the oven to 190 C / Gas mark 5. Grease 2 or 3 large baking sheets.
    2. Cream together butter, oil, caster sugar and icing sugar until smooth. Beat in eggs and vanilla.
    3. Combine flour, bicarbonate of soda and cream of tartar; stir into sugar mixture until just combined. Drop dough by teaspoonfuls onto prepared baking trays, but leave some space beside them as they may spread out a little.
    4. Bake in the preheated oven until bottoms are lightly browned, 8 to 10 minutes. Transfer to wire cookling racks.

    Well I followed this recipe exactly and they somehow ended up as cakes Dont get me wrong they were really nice Just they ended up as cakes Not biscuits Probably why I'm not on the great british bake off  -  11 Sep 2015


    I made this recipe for Christmas & everyone just loved the cookies. I also put a homemade frosting on top of them & they were even better... Mix about 1 1/2 sticks of soften butter & about 3 cups of powdered sugar until creamy. Add a 1/4 to 1/2 tsp of vanilla & stir in some milk, about 1-3 tbs until desired texture.
