Black eye bean salad

    This black eye bean salad is flavourful, nutritious and protein rich. It is served warm, is a great healthy meal for two and is suitable for vegan and vegetarian diets.

    Serves: 2 

    • 170g (6 oz) black eye beans, soaked overnight
    • 4 tablespoons French dressing
    • 1 small red pepper, chopped
    • 110g (4 oz) button mushrooms, finely sliced
    • 2 tablespoons chopped fresh parsley

    1. In a saucepan with boiling water, add the beans and cook for 10 minutes. Reduce the heat and simmer for a further 30 minutes or until the beans are soft.
    2. Drain the beans and while still hot, add the French dressing pepper and mushrooms. Garnish with chopped fresh parsley and serve.


    To ensure that this dish is truly vegan, ensure that each of the ingredients do not have any additives that may contain gluten products.
