2 eggs, beaten
300g plain flour
1 teaspoon bicarbonate of soda
175ml vegetable oil
4 tablespoons buttermilk
1 1/2 tablespoons brown rice syrup or agave
1 1/2 teaspoons vanilla extract
3 large bananas, mashed
125g chopped walnuts

Preheat the oven to 180 C / Gas mark 4. Lightly grease a large loaf tin.
Beat eggs, flour and bicarb together. Stir in oil, buttermilk, brown rice syrup and vanilla. Fold in bananas, sultanas and walnuts. Pour cake mixture into prepared tin.
Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 25 minutes.
