Gluten-free Christmas cake

About this recipe: The whole family will enjoy this Christmas cake and won't even know it's gluten free. Packed with all the traditional fruit and spices, it's both gluten free and dairy free.

  • 200g chopped dates
  • 275ml boiling water
  • 4 tablespoons orange juice
  • 200g mixed dried fruit
  • 175g gluten free flour
  • 40g ground almonds
  • 3 teaspoons gluten free baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 pinch salt
  • 1 lemon, zested
  • whole almonds, for garnish

Method

  1. Preheat the oven to 160 C / Gas 3. Line a large loaf tin with baking parchment.
  2. Place chopped dates in boiling water and let soak until soft, about 10 minutes. Mash with a fork and stir in orange juice.
  3. Combine dried fruit, flour, ground almonds, baking powder, cinnamon, allspice, ginger, nutmeg and salt in a large bowl. Stir in date mixture and lemon zest. Turn into prepared tin; press whole almonds on top of cake mixture to make a decorative pattern.
  4. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 90 minutes.

Tip

Instead of a loaf tin, you can bake this cake in a 20cm or 23cm square cake tin. Adjust baking time as needed.
