About this recipe: The secret to this sweet potato pie is using a bit of evaporated milk. Ground ginger, cinnamon and nutmeg give it a tonne of flavour.


Serves: 8 

  • 500g cooked and mashed sweet potatoes
  • 60g butter, softened
  • 2 eggs, separated
  • 110g brown soft sugar
  • 1 pinch of salt
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 125ml evaporated milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons caster sugar
  • 1 (23cm) pastry case

  1. Preheat the oven to 200 C / Gas 6.
  2. Combine sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg, evaporated milk and vanilla in a bowl; mix well.
  3. Beat egg whites until stiff peaks form; stir in caster sugar. Fold egg whites into sweet potato mixture. Pour into unbaked pastry case.
  4. Bake in the preheated oven for 10 minutes. Reduce the temperature to 180 C / Gas mark 4 and continue baking until firm, about 30 minutes.
