About this recipe: Very easy and tasty meal made with bacon and pine nuts, finished with fresh tarragon and lemon juice. My husband loves it!

Serves: 2 

  • olive oil
  • 300g (11 oz) bacon rashers, sliced into 5cm (2 in) strips
  • 100g (4 oz) pine nuts
  • 175g (6 oz) spaghetti
  • 50g (2 oz) Cheddar cheese, grated
  • sea salt and freshly ground black pepper to taste
  • 1 (20g) pack fresh tarragon - stems removed and finely chopped
  • 1 lemon, halved

  1. Preheat oven to 220 C / Gas mark 7. Drizzle a roasting tin with olive oil. Place the bacon in the roasting tin and cook in the preheated oven for 20 minutes.
  2. Meanwhile, cook spaghetti according to package instructions.
  3. During the last ten minutes of cooking the bacon, take tin out of the oven and sprinkle pine nuts over the bacon slices. Put the tin back to oven for the remaining 10 minutes.
  4. When bacon is browned and crisp, take the tin out of the oven, add the drained spaghetti to the tin and toss thoroughly. Add the cheese and season with sea salt and black pepper. To serve, sprinkle with the tarragon and lemon juice.

Delicious and my kids loved it too. Quite salty due to the bacon so don't add any salt until you've tasted it. - 06 Oct 2012
