Creamy mango mousse

    This delicious mango mousse is creamy, refreshing and quite decadent. Tastes best with well ripened mangoes when they are at their sweetest.

    Serves: 6 

    • 3 mangoes, stoned
    • 2 lemons or limes, juiced
    • 60g (2 oz) caster sugar
    • 1 packet powdered gelatine
    • 2 tablespoons hot water
    • 2 egg whites
    • 150ml (1/4 pt) double cream

    1. Place the flesh of the mangoes in a food processor and blend until smooth. Add lemon juice and sugar and mix well.
    2. Dissolve the gelatine in the hot water. Allow to cool some, then add to the mango purée.
    3. Whisk the egg whites until stiff peaks form then fold into the mango purée. Whisk the double cream in a separate bowl and fold in as well.
    4. Transfer to a dessert dish and chill for at least 2 hours. Once chilled, remove from the fridge and serve.
