About this recipe: Make the delicate French clafoutis with mulberries for a quick and easy pud. Or use raspberries or black cherries. Serve warm with some whipped cream.

Serves: 8 

  • 450g (1 lb) fresh mulberries
  • 3 dessertspoons caster sugar
  • 2 eggs
  • 150ml (1/4 pt) soured cream
  • 1 tablespoon plain flour

  1. Preheat oven to 150 C / Gas 2.
  2. Put mulberries in a shallow dish and sprinkle on 1 dessertspoon sugar. Put in the preheated oven to warm through.
  3. Mix 1 dessertspoon sugar with eggs, soured cream and flour and beat well. Pour over warm fruit and bake for 45 minutes.
  4. Sprinkle with the last spoon sugar over and serve hot with cream.
