Frozen nutty nana's

    Firstly, please excuse the weird title - it's just what I used to call them when I was little and my mum would make them, so the name's kind of stuck in our family! Basically, they're little "sandwiches" of banana slices filled with peanut butter, a perfect healthy sweet treat. Seven of them contain about 160 or so calories, and of course, they're packed with potassium. In the past, I've added a pinch of cinnamon for extra flavour.

    Serves: 4 

    • 5 medium-sized ripe bananas
    • 1 tablespoon creamy peanut butter
    • 55g (2 oz) non-fat vanilla Greek yoghurt

    1. Peel one banana and mash it in a bowl with the peanut butter and yoghurt. Set aside.
    2. Peel the other four bananas and cut them into slices about half an inch thick. Smear the banana, peanut butter and yoghurt mixture on half the banana slices and top with the other halves, making little banana sandwiches.
    3. Place them gently on a wooden chopping board or plate, and pop them in the freezer for at least 2 hours.


    For the peanut butter, I use smooth, but of course this is all a matter of personal preference. Although having said that, it might not work at all with crunchy PB; I've never actually tried it! Let me know how it goes if you do!
