675g plain flour
3 1/2 tablespoons baking powder
3 tablespoons caster sugar
3 tablespoons cocoa powder
3 teaspoons salt
150g mini chocolate chips or chopped chocolate

For the pancake mix:
Sift flour, baking powder, caster sugar, cocoa powder and salt into a bowl. Stir in chocolate. Store in an airtight container in the cupboard for up to 3 months.
To prepare the pancakes:
To prepare batter: Add 280g pancake mix to a bowl. Make a well in the centre and add, 300ml milk, 1 egg and 3 tablespoons melted butter. Mix until smooth.
Heat a lightly oiled frying pan or griddle over medium-high heat. Spoon about 60ml of pancake batter on to the griddle. Cook until bubbles form on top, 3 to 4 minutes. Flip and cook until golden brown on the bottom, 2 to 3 minutes.
