About this recipe: These fluffy American-style pancakes have cocoa powder and chocolate chips for a double helping of chocolate flavour! The pancake mix is a great item to have in the cupboard to make at a moment's notice after a long lie-in, or to whip up for a sweet after-school treat.


Serves: 24 

  • Pancake mix
  • 675g plain flour
  • 3 1/2 tablespoons baking powder
  • 3 tablespoons caster sugar
  • 3 tablespoons cocoa powder
  • 3 teaspoons salt
  • 150g mini chocolate chips or chopped chocolate

  • 300ml milk
  • 1 egg
  • 3 tablespoons melted butter

    For the pancake mix:

  1. Sift flour, baking powder, caster sugar, cocoa powder and salt into a bowl. Stir in chocolate. Store in an airtight container in the cupboard for up to 3 months.

  3. To prepare batter: Add 280g pancake mix to a bowl. Make a well in the centre and add, 300ml milk, 1 egg and 3 tablespoons melted butter. Mix until smooth.
  4. Heat a lightly oiled frying pan or griddle over medium-high heat. Spoon about 60ml of pancake batter on to the griddle. Cook until bubbles form on top, 3 to 4 minutes. Flip and cook until golden brown on the bottom, 2 to 3 minutes.
