About this recipe: Extremely easy and tasty quick supper. German smoked sausage, sauteed potatoes and onions with a baked egg. Serves 2.

Serves: 2 

  • olive oil
  • 2 large potatoes, thinly sliced
  • 2 large onions, sliced
  • 1/2 smoked sausage ring or 2 large fat smoked sausages, sliced
  • salt and pepper to taste
  • 2 eggs
  • 2 knobs butter

  1. Heat a little oil in a non-stick frying pan. Add the potato slices and fry gently for 10 minutes, until starting to colour.
  2. Add the onions and mix in gently with the potatoes. Pan fry together until the potatoes and onion are cooked and browned well over gentle heat, about 30 minutes. Meanwhile preheat the oven to 200 C / Gas 6.
  3. Remove the potatoes and onions and distribute into 2 individual ovenproof serving dishes.
  4. In the same frying pan add the smoked sausage and cook until browned well. Add to the potato mix. Season generously.
  5. Place in the oven for 10 minutes. Remove then gently crack an egg on the top of each dish. Add a knob of butter and place back in the oven for a further 10 minutes or until the egg white has set and the yolk still soft (optional). Serve.
