Currant and almond apple strudel

    An apple strudel recipe that is quick and easy to prepare because it uses shop-bought puff pastry. Currants and almonds give it a unique twist and add a bit of colour.

    Serves: 6 

    • 5 tart apples - peeled, cored and thinly sliced
    • 75g brown soft sugar
    • 100g flaked almonds
    • 75g currants
    • 1/2 teaspoon ground cinnamon
    • 1 teaspoon vanilla extract
    • 500g puff pastry
    • 1 egg
    • 60ml milk
    • flaked almonds, for sprinkling

    1. Preheat the oven to 200 C / Gas 6. Line a baking tray with parchment.
    2. Toss apples with brown sugar, almonds, currants, cinnamon and vanilla in a large bowl. Set aside.
    3. Place puff pastry on the baking tray. Roll out lightly to cover the entire tray. Arrange apple filling down the middle of the pastry, lengthways. Fold pastry lengthways around apple mixture. Seal edges of pasty by using a bit of water on your fingers, rubbing the pastry and pinching edges together. Whisk egg and milk together; brush on top of pastry. Cut several vents with a knife or scissors and sprinkle with a few flaked almonds.
    4. Bake in the preheated oven until golden brown, 35 to 40 minutes.
