About this recipe: A stunning recipe that impresses and looks very complicated but is very simple -You can't fail to get compliments with this recipe!! Perfect for a romantic dinner for two served with new potatoes and tenderstem broccoli.

Serves: 2 

  • 2 chicken breasts
  • 1 pack of low fat garlic and herb soft cheese
  • 1 pack parma ham, proscuitto or equivalent.
  • 1 cup red wine
  • 1 cup chicken stock (1 whole stock cube in 1 cup boiling water)
  • 2 tablespoons of sugar
  • Salt and pepper to taste

  1. slice along the side of each chicken breast to make a pocket.
  2. Stuff each breast with approx 1 tbs of soft cheese and close the pocket again.
  3. wrap each breast with 2 slices of parma ham to cover the breast completely. These can be prepeared in advance and chilled.
  4. Heat the wine, stock and sugar in a heavy based pan until boiling.
  5. Add the chicken breasts and simmer for 20 minutes, turning occasionally in the liquid. Don't worry if some of the cheese seeps out. It will add to the flavour of the sauce.
  6. Remove chicken breasts and keep warm whilst finishing the sauce
  7. Turn the heat up high and boil the sauce until it reduces considerably ( five to ten minutes) stirring often. It will thicken and caramelise a little to make a sticky red wine sauce.
  8. Once the sauce is reduced, serve the chicken breasts with the sauce poured over with your choice of potato and vegetables.


Try this with different types of cheese filling. Maybe brie would be really good too!
