Easy tarte tatin

    The classic French upside down apple tart is always a delicious and rewarding treat. This one is simple, as it should be, so it really celebrates apples when in season.

    Makes: 1 tarte tatin

    • butter
    • caster sugar
    • 4 cox apples, peeled and quartered
    • puff pastry

    1. Preheat oven to 200 C / Gas 6.
    2. Generously butter the bottom of a round glass flan dish and cover with a thin layer of caster sugar. Put in oven to melt and colour.
    3. Add apples, neatly packing in and filling gaps. Return to oven to cook apples and caramelise a little. Remove from oven and allow to cool a little.
    4. Turn oven up to 220 C / Gas 7.
    5. Cover the apples with puff pastry, tucking in around the sides.
    6. Return to the oven and bake until golden. Take out of the oven and immediately invert onto a plate.
