Minestrone for a crowd

    This recipe makes a big pot full of the tasty Italian soup. You can serve the soup as vegetarian starter or a bigger portion as main course.

    Ingredients
    Serves: 16 

    • 4 sticks celery
    • 4 potatoes
    • 4 carrots
    • 4 onions
    • 1.8L (2 qt) water
    • 4 to 6 vegetable stock cubes
    • 2 cloves garlic, crushed
    • 1 small cabbage, chopped
    • 4 large tomatoes, diced
    • 280g (10 oz) kidney beans, cooked
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1 tablespoon salt
    • 1 teaspoon black pepper
    • 2 tablespoons oil

    1. Coarsely chop celery, potatoes, carrots and onions and cook in water with stock cubes until veg is soft.
    2. Add remaining ingredients. Simmer till flavours have combined.
