Stuffed avocado

    This makes a pretty appetiser. Avocado is mixed with peanuts and spices and scooped back into the hollowed shells. Serve with crackers.

    Serves: 6 

    • 3 ripe avocados, halved
    • 3 tablespoons lemon juice
    • 60g roasted peanuts, ground
    • 1 teaspoon curry powder
    • 1 pinch chilli powder or cayenne pepper
    • 1 tablespoon Worcestershire sauce
    • salt and freshly ground black pepper to taste

    1. Stone avocados, scoop out flesh, but take care of the shells. Put lemon juice on to the flesh immediately and liberally while scooping, to avoid it going brown.
    2. Mix peanuts, curry powder, chilli powder and Worcestershire sauce with the avocado flesh. Pile back into the shells and serve.


    You can make the same mixture and serve it as a dip instead of in the individual shells.
    To make a vegan or vegetarian version of this dish, simply omit the Worcester sauce. You could add some soy sauce as a substitute.
