Method Prep:5min › Cook:30min › Ready in:35min
Preheat oven to 180 C / Gas 4.
Mix all ingredients together, reserving a handful of grated cheese. Turn mixture into shallow 2L casserole, sprinkle with remaining cheese.
Bake uncovered until centre is set, 30 to 40 minutes.
If you don't have leftover rice, make rice from scratch, place in a shallow dish and pop in the freezer to cool completely. If you start with hot, freshly cooked rice, it may become mushy whilst baking.
I thought this recipe was brilliant! Easy to make and you could add any other ingredients in your fridge. I added tomatoes peas and bacon. As it had the rice in I found it filling yet not heavy. The family loved too and cleared their plates. I will definitely make again. - 26 Mar 2015
