Cheddar rice casserole

About this recipe: If you have cooked rice leftover and a few veggies and some cheese to hand, make this easy vegetarian casserole for dinner.

Serves: 6 

  • 160g cooked long grained rice
  • 100g butter or margarine
  • 2 tablespoons sauted chopped onions
  • 300g chopped cooked spinach
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 240ml milk
  • 1/2 teaspoon dried marjoram
  • 4 beaten eggs
  • 350g grated Cheddar cheese
  • salt and pepper to taste

Prep:5min  ›  Cook:30min  ›  Ready in:35min 

  1. Preheat oven to 180 C / Gas 4.
  2. Mix all ingredients together, reserving a handful of grated cheese. Turn mixture into shallow 2L casserole, sprinkle with remaining cheese.
  3. Bake uncovered until centre is set, 30 to 40 minutes.


If you don't have leftover rice, make rice from scratch, place in a shallow dish and pop in the freezer to cool completely. If you start with hot, freshly cooked rice, it may become mushy whilst baking.

I thought this recipe was brilliant! Easy to make and you could add any other ingredients in your fridge. I added tomatoes peas and bacon. As it had the rice in I found it filling yet not heavy. The family loved too and cleared their plates. I will definitely make again. - 26 Mar 2015
