Fluffy sweetcorn bake

    This is a souffle like dish with fresh sweetcorn. It has a delicious sweetness to it and is wonderfully light and airy. Serve as a special side dish to your favourite roast or even chilli con carne.

    Serves: 4 

    • 40g (1 1/2 oz) butter
    • 40g (1 1/2 oz) plain flour
    • salt and black pepper, to taste
    • 300ml (1/2 pt) milk
    • 150g fresh sweetcorn kernels
    • 1 teaspoon chopped parsley
    • 1 teaspoon onion juice
    • 3 egg yolks
    • 4 egg whites, beaten to stiff peaks

    1. Preheat oven to 180 C / Gas 4. Grease a deep 450ml (1 1/2 pt) oven dish.
    2. Melt butter in a pan, add flour and cook for a few minutes, stirring well. Season, remove pan from heat, blend in the milk and return to heat to cook for a few minutes.
    3. Take off the heat, add the sweetcorn, onion juice and parsley, stirring well. Whisk in egg yolks one at a time. Season, then fold in stiffly beaten egg whites. Turn into prepared oven dish.
    4. Bake for 20 minutes, or until centre is set. Serve at once.
