About this recipe:
A vegetarian meatloaf with hazelnuts, carrots and mushrooms. I use wholemeal breadcrumbs to make this vegetarian "roast" even healthier.
50g (2 oz) ground hazelnuts
50g (2 oz) coarsely ground peanuts
25g (1 oz) grated cheese
1 teaspoon mixed herbs
75g (3 oz) finely chopped raw carrot
1 teaspoon Marmite® or Barmene®
50g (2 oz) chopped mushrooms
100g (4 oz) wholemeal breadcrumbs
75g (3 oz) finely chopped onion
salt to taste
- Preheat oven to 180 C / Gas 4.
- Mix all the ingredients together with a little water or egg until well bound together. Turn into a greased loaf tin.
- Bake in preheated oven for 45 minutes (it will come out of the tin easily when ready).
This is my number 1 favourite recipe. Love it

So good my 17 year old didn't believe it was home made! Best nut roast I've done, lovely and moist, I only had emmental cheese in the house so stuck that in and it tasted great

Sooo yummy and easy to make.Tweaked some of the ingredients but used the same quantities and it worked a treat.
