About this recipe: The flan makes for a rustic lunch or light supper with a mixed garden salad. Chopped fresh herbs would make a lovely addition, and non-vegetarians can add some bacon to the flan, if they like.

Makes: 1 flan

  • 1 (20 to 23cm) baked flan case
  • 3 tomatoes, chopped and seeded
  • 6 large mushrooms, chopped
  • 2 eggs
  • 3 tablespoons thick cream
  • salt and pepper to taste
  • 75g (3 oz) grated Cheddar cheese

Prep:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat oven to 190 C / Gas 5.
  2. Combine tomatoes and mushrooms with beaten eggs and cream. Season and pour into flan case, scattering cheese on top.
  3. Bake in preheated oven for 15 to 20 minutes.
