    About this recipe: Leeks don't only taste great, as in this tart, but they are also a good source of dietary fibre and vitamin C, which make them an ideal winter veg.

    Ingredients
    Serves: 6 

    • 1 large shortcrust pastry case
    • 900g (2 lb) leeks
    • 50g butter
    • salt and pepper to taste
    • 1 pinch nutmeg
    • 3 eggs
    • 75g (3 oz) grated cheese
    • 300ml (1/2 pt) double cream

    Method
    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat oven to 180 C / Gas 4. Prebake pastry case for 10 minutes.
    2. Slice leeks in rounds, discarding the tough green parts at the very end. Saute gently in butter until soft. Season well, add nutmeg. Add leek mixture to beaten eggs and cream, and pour into pastry case. Sprinkle with cheese.
    3. Bake at 180 C / Gas 4 for 25 minutes, or until centre is set. Serve hot.
