1 large shortcrust pastry case
900g (2 lb) leeks
salt and pepper to taste
1 pinch nutmeg
75g (3 oz) grated cheese
300ml (1/2 pt) double cream

Preheat oven to 180 C / Gas 4. Prebake pastry case for 10 minutes.
Slice leeks in rounds, discarding the tough green parts at the very end. Saute gently in butter until soft. Season well, add nutmeg. Add leek mixture to beaten eggs and cream, and pour into pastry case. Sprinkle with cheese.
Bake at 180 C / Gas 4 for 25 minutes, or until centre is set. Serve hot.
