    About this recipe: My go-to dish when we are having my kid's friends over for dinner. Even the fussiest child loves this cheesy macaroni with tomato sauce.

    Serves: 8 

    • 1 onion, minced
    • 1 tablespoon oil
    • 1kg tinned tomatoes (including juice)
    • 170g (6 oz) tomato puree
    • 1 teaspoon salt
    • 1/2 teaspoon sugar
    • 1 teaspoon dried basil
    • 1/2 teaspoon dried oregano
    • 225g (8 oz) macaroni
    • 225g (8 oz) cottage cheese
    • 225g (8 oz) cubed Cheddar cheese

    1. In a large pan saute onion in oil until tender. Add tinned tomatoes, puree, salt, sugar, basil and oregano. Simmer covered for 20 minutes, stirring occasionally.
    2. Meanwhile cook macaroni in a large saucepan with salted water until al dente. Drain.
    3. Preheat oven to 180 C / Gas 4.
    4. Mix macaroni with the cheeses and the tomato sauce. Pour into greased 2.4L (4 pt) casserole.
    5. Bake 30 minutes or until bubbly.
