Nut mince

    A quick vegetarian meal to prepare. Use any mixture of nuts and serve with brown rice or try quinoa or barley as a side. The grains add to the nutty flavour.

    Serves: 4 

    • 1 large onion
    • 25g (1 oz) butter
    • 3 carrots
    • 1 tablespoon plain flour
    • large pinch mixed herbs
    • 300ml (1/2 pt) vegetable stock
    • 170g (6 oz) grated nuts

    1. Chop onion and cook gently in butter. Meanwhile finely grate carrots. Add to onion with the flour. Cook for 2 to 3 minutes until carrots soften, stirring frequently. Add herbs and stock.
    2. Cook for a further few minutes to complete cooking of carrots, stirring occasionally. Stir in grated nuts (which are more digestible if uncooked!) and serve at once.
