About this recipe:
Cook up a batch of these vegetable pancakes and enjoy them as a savoury lunch or dinner. Ready in no time and a great way to get kids to eat their veg!
2 cupfuls of leafy veg (spinach, kale, cabbage, etc.), chopped
1 onion, finely chopped
1 clove garlic, finely chopped
1 slice root ginger, finely chopped
2 tablespoons oil
1 tablespoon soy sauce, or to taste
4 beaten eggs
4 cooked pancakes, kept warm
- Fry vegetables, onion, garlic and ginger in oil until soft. Add soy sauce and beaten egg and cook until egg has set. Place a quarter of the mixture on to a pancake, fold over and serve hot.
