About this recipe: Cook up a batch of these vegetable pancakes and enjoy them as a savoury lunch or dinner. Ready in no time and a great way to get kids to eat their veg!

Serves: 4 

  • 2 cupfuls of leafy veg (spinach, kale, cabbage, etc.), chopped
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 slice root ginger, finely chopped
  • 2 tablespoons oil
  • 1 tablespoon soy sauce, or to taste
  • 4 beaten eggs
  • 4 cooked pancakes, kept warm

  1. Fry vegetables, onion, garlic and ginger in oil until soft. Add soy sauce and beaten egg and cook until egg has set. Place a quarter of the mixture on to a pancake, fold over and serve hot.
