About this recipe: This pea omelette makes a big, savoury brunch, lunch or quick supper for one or two. You could add grated cheese to the egg mixture for a tasty variation.

Serves: 1 

  • 150g cooked peas
  • 4 beaten eggs
  • 4 tablespoons hot water
  • 30g butter, melted
  • 1 teaspoon onion juice (optional)
  • 20g butter
  • salt and pepper to taste

  1. Cook peas in boiling water until soft and keep hot.
  2. Combine eggs, hot water, melted butter and onion juice in a bowl.
  3. Melt 20g butter in a pan, brown well and put in the egg mixture. Stir till eggs have set. Season.
  4. Put 2 tablespoons boiled peas in the middle of the omelette, turn one half of it over the peas and put on a hot dish. Arrange the rest of the peas around the omelette. Serve at once.
