About this recipe:These flavourful beef kebabs are made with sirloin steak, mushrooms, onion and green pepper in a tasty marinade. You can change the veg according to your own tastes - any colour pepper would work a treat, for example, or you could use plum tomatoes, shallot, cubed aubergine, etc.
5 tablespoons lemon juice
2 tablespoons vegetable oil
3 teaspoons Worcester sauce
1 teaspoon paprika
2 cloves garlic, chopped
1/4 teaspoon salt, or to taste
dash of Tabasco® sauce
350g beef sirloin, cut into 2.5cm cubes
8 white mushrooms
1 onion, cut into large pieces
1 green pepper, cut into large pieces

Whisk together the lemon juice, oil, Worcestershire, paprika, garlic, salt and Tabasco. Take 5 tablespoons of the mixture and place in a plastic freezer bag; reserve the remaining marinade in a bowl or jug. Add the sirloin cubes to the bag and toss to coat with the marinade, and seal the bag. Keep the bag and the extra marinade in the fridge for 2 hours or overnight.
If using wooden skewers, soak in water for 15 minutes to prevent burning. Thread the steak and vegetables alternately onto the skewers. Discard any marinade left in the bag.
Preheat an outdoor barbecue for medium heat; lightly oil the grate.
Barbecue, uncovered (or grill 8cm from heat) for 6 to 8 minutes on each side or until beef reaches desired doneness, basting frequently with reserved marinade and turning once.
