About this recipe: Fruity and lemony muffins are topped with slices of strawberries that resemble hearts. A perfect treat for those you love - make these on Valentine's Day or Mother's Day!


Serves: 24 

  • 1 tablespoon lemon juice
  • 225ml milk
  • 110g butter, at room temperature
  • 300g caster sugar
  • 4 large eggs
  • 2 teaspoons lemon extract
  • 1/2 teaspoon lemon zest
  • 150g chopped fresh strawberries
  • 375g plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 85g minature chocolate chips (optional)
  • 24 slices fresh strawberry
  • 1 tablespoon caster sugar

  1. Mix lemon juice with as much milk needed to measure 225ml; let the soured milk stand for 5 minutes before using.
  2. Preheat the oven to 180 C / Gas 4. Line 24 muffin moulds with paper cases.
  3. Cream butter and 300g caster sugar until light and fluffy. Beat in eggs, one at a time; add lemon extract. Gradually stir in lemon zest and soured milk. Fold in chopped strawberries. Mix flour, baking powder, bicarb and salt together in a bowl. Stir butter mixture into flour mixture until dry ingredients are just moistened. Fold in chocolate chips, if using.
  4. Spoon muffin mixture into prepared cases to about 2/3 full. Place a strawberry slice atop each muffin and sprinkle with some of the 1 tablespoon sugar.
  5. Bake in the preheated oven until a skewer inserted into the centre of a muffin comes out clean, 25 to 30 minutes. Cool in the tin for 5 minutes before serving warm.
