About this recipe: A creamy salmon recipe to entice your taste-buds. This recipe is quick, easy and delightful to eat. Make it for a party or just for that special someone. Shetland, Scotland, UK

Serves: 2 

  • 2 salmon fillets
  • juice of 1 lemon
  • 1 tbsp chopped chives
  • 1 tbsp chopped parsley
  • 150ml (5 fl oz) single cream
  • 1 tbsp fresh breadcrumbs
  • a little melted butter

Prep:5min  ›  Cook:18min  ›  Ready in:23min 

  1. Preheat oven to 180 C / Gas 4.
  2. Lay salmon in a shallow buttered dish. Sprinkle over with the lemon juice, herbs and 1 tbsp water.
  3. Cover with foil. Cook in the oven for 10 to 15 minutes until tender.
  4. Heat the cream gently and pour over the fish.
  5. Sprinkle with breadcrumbs and melted butter and brown under a hot grill.
