Smoked salmon and sweet potato pie

    This tasty recipe can be made with sweet potato or regular potatoes giving you a chance to mix up different flavours and have it the way that you like it.

    Serves: 4 

    • 1kg sweet potatoes, peeled and cut into 3cm dice
    • 120g cream cheese with chives
    • 300g smoked salmon
    • 300g fresh unsmoked salmon
    • 2 tablespoons semi-skimmed milk

    1. Preheat the oven to 190 C / Gas 5.
    2. Cover the potatoes with water, bring to the boil and cook for 10 minutes or until soft.
    3. Drain well and mash with 20g of the cream cheese. Set aside.
    4. Place the fish in a microwaveable dish with a teaspoon of milk, cover and microwave on high for 5 minutes or steam for 8 to 10 minutes until just cooked.
    5. Flake the fish and place into a large ovenproof dish. Mix the remaining cream cheese with the milk and spoon over the fish.
    6. Top with the mashed sweet potato and cook for 20 minutes until the cheese is bubbling around the edge of the dish and the potato is browned.
