About this recipe:
All the lovely flavours of Christmas, baked into a luscious cheesecake! This is a fab way to use mincemeat.
125g digestive biscuit crumbs
90g melted butter
1/2 teaspoon ground cinnamon
500g cream cheese, softened
1 dessertspoon rum or brandy

- Combine base ingredients and press into 20cm springform tin. Refrigerate while making filling.
- Beat cream cheese and sugar till smooth. Add the eggs, one at a time; stir in mincemeat and rum or brandy. Spoon mixture over chilled base.
- Bake in a preheated 160 C / Gas 2-3 oven for 1 hour, or until firm. Cool with oven door ajar, then chill in the fridge overnight.
