About this recipe: All the lovely flavours of Christmas, baked into a luscious cheesecake! This is a fab way to use mincemeat.

Serves: 10 

  • Base
  • 125g digestive biscuit crumbs
  • 90g melted butter
  • 1/2 teaspoon ground cinnamon
  • Filling
  • 500g cream cheese, softened
  • 150g sugar
  • 3 eggs
  • 175g mincemeat
  • 1 dessertspoon rum or brandy

Prep:30min  ›  Cook:1hr  ›  Extra time:8hr chilling  ›  Ready in:9hr30min 

  1. Combine base ingredients and press into 20cm springform tin. Refrigerate while making filling.
  2. Beat cream cheese and sugar till smooth. Add the eggs, one at a time; stir in mincemeat and rum or brandy. Spoon mixture over chilled base.
  3. Bake in a preheated 160 C / Gas 2-3 oven for 1 hour, or until firm. Cool with oven door ajar, then chill in the fridge overnight.
