This cake turned out to be totally delicious - the whole family loved it and it only lasted a day! It was quite a runny and slightly strange-smelling mixture when it went in the oven, but it turned out to be amazing! I used dark soft brown sugar for the coconut, sugar and cinnamon mix, which worked a treat, and cooked it at 165 degrees in a fan oven for bang on an hour. This bread was delicious but I did have a problem with the top getting too browned before the loaf was finished baking. I tented the top with foil and this seemed to help a bit.
