Marinated mushroom salad

    Sliced mushrooms and onions are marinated in vinegar, then tossed in a simple mustard dressing and seasoned with fresh herbs.

    Serves: 2 

    • 1 tablespoon finely chopped onion
    • 225g button mushrooms, cleaned and sliced
    • 120ml red or white wine vinegar
    • 120ml cold water
    • 1 teaspoon smooth French mustard
    • 4 tablespoons olive oil
    • salt and freshly ground black pepper, to taste
    • 1 tablespoon freshly chopped chervil or parsley

    1. Place sliced mushrooms and onion in a bowl.
    2. Bring vinegar and water to the boil; pour over mushrooms and onion. Marinate mushroom mixture for 2 hours or more, turning periodically.
    3. Place mustard in a salad bowl; add oil and mix well. Strain mushrooms mixture and add to bowl. Season to taste with salt and pepper; sprinkle freshly chopped chervil on top, just before serving.
