About this recipe: Many chillis are made with kidney or red beans. This vegetarian version features Quorn mince and baked beans, adding a bit of a sweet flavour.


Serves: 5 

  • 400g Quorn mince
  • 2 onions, chopped
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground coriander
  • 1 green chilli, seeds removed and finely chopped
  • 100ml cream sherry
  • 1 (400g) tin of chopped tomatoes
  • 200g baked beans
  • 250ml water
  • 1 vegetable stock cube

  1. Brown Quorn mince with onion and garlic in a large deep pan. Stir in salt, pepper, cumin, cinnamon and coriander. Add green chilli and sherry; simmer for 5 minutes.
  2. Pour in tinned tomatoes, baked beans, water and stock cube. Mix well and cook on a low heat for 40 to 50 minutes.

Cook's note

Serve with rice, chips, garlic naan or baked potato.
