120g butter, softened
200g caster sugar
2 very ripe bananas, mashed
125g self-raising flour
30g milled flaxseed
60g chopped walnuts

Preheat the oven to 160 C / Gas mark 3. Grease a 1lb loaf tin.
Beat butter and sugar in a bowl with an electric mixer until light and fluffy. Add eggs, one at a time; stir in mashed bananas. Mix in self-raising flour and flaxseed until just incorporated. Fold in walnuts. Pour mixture into prepared tin.
Bake in the preheated oven until a skewer inserted into the centre of the loaf comes out clean, 20 to 25 minutes. Cool in the tin for 10 minutes before removing to a wire rack to cool completely.
