When more and more Chinese families have ovens, this street food finally can be made at home. Roasted with sugar, the chestnuts are crunchy outside and soft and sweet inside.

500g fresh chestnuts
4 tablespoons vegetable oil

Preheat the oven to 200 C. Wash and dry the chestnuts well. Cut open a small hole on the side that has the bigger bulge on each of the chestnuts with a fine knife. Cut only the shells not the flesh. Cut in a "see-saw" motion if you are using a serrated knife.
Drizzle oil over the chestnuts; toss well making sure each chestnut is coated with oil.
Line a baking tray with foil; place the chestnuts evenly on the tray and bake for about 20 minutes.
Mix the sugar and water; stir well.
After baking for 20 minutes, the chestnuts should be mostly cooked and the cracks should have opened up. Brush the chestnuts with the sugar syrup, pushing it into the cracks. Bake for 5 more minutes and serve.
