    About this recipe: Delicious alternative to coleslaw (and healthier too).

    Ingredients
    Makes: 1 salad

    • 1/2 fennel bulb
    • 1 large beetroot (tennis ball size)
    • 1 yellow pepper
    • 2 tbsp red wine vinegar
    • 1 tbsp balsamic vinegar
    • 1 tbsp extra virgin olive oil
    • Generous handful of fresh mint
    • Handful of fresh corriander

    Method

    1. grate the vegetables
    2. add the fresh herbs
    3. Add the vinegars and oil
    4. stir well

    Tip

    Better to make in advance to let all the flavours meld together
