Basic tomato sauce

    This recipe came from an Italian friend. A basic tomato pasta sauce that is delicious with spaghetti, and with cheese sprinkled on top. Suitable for the whole family, but young children will especially love it.

    Serves: 6 

    • 2 small onions, finely chopped
    • 6 tablespoons olive oil
    • 4 cloves garlic, crushed
    • 3 mushrooms, chopped
    • 500g tomatoes
    • 150g tomato puree
    • salt and pepper
    • 1 teaspoon dried basil
    • 1/2 teaspoon dried oregano

    1. Fry onions in the oil until soft. Add garlic and mushrooms and cook gently till mushrooms have softened.
    2. Puree the fresh tomatoes in a blender until smooth and add to the pan with the 150g tomato puree. Stir and season with salt, pepper and dried herbs. Simmer for 15 minutes, or till thickened slightly.
