Sweet potato shepherd's pie

About this recipe: I use sweet potatoes rather than ordinary potatoes as my daughter and I both love them, and they are healthier too.

Serves: 6 

  • 3 large sweet potatoes
  • 500g lamb mince
  • 1 tin sweetcorn, drained
  • 300g peas, fresh or frozen
  • 300ml gravy, made from granules
  • 1 tablespoon margarine

  1. Peel and chop sweet potatoes. Boil in a large saucepan until soft and ready to mash.
  2. Pre-heat oven to 190 C / Gas 5.
  3. While potatoes are cooking, fry mince in a large frying pan, draining off any excess fat.
  4. Place the cooked lamb and vegetables together in an oven-proof casserole dish with the gravy.
  5. Drain the potatoes, and mash them with a little margarine. Once creamy, add to the top of the mince and vegetables and smooth down.
  6. Place in the oven and cook for about 30 to 40 minutes, until the potato topping looks cooked and lightly browned.


You can get creative with this basic recipe by adding dried or fresh herbs to the mince, or try topping the sweet potato with grated cheese before baking. Enjoy!
