Fruity chicken curry

    A delicious but simple fruity curry recipe. Serves two hungry people.

    Serves: 2 

    • 25g butter
    • 2 chicken breast fillets, diced
    • 1 onion, sliced
    • 4 garlic cloves, minced
    • 3 tablespoons curry powder
    • 1/2 apple, diced
    • 1 stalk celery, chopped
    • 1/2 red pepper, chopped
    • 75g (3 oz) sultanas
    • 500ml (17 fl oz) chicken stock
    • salt to taste

    1. Melt butter in a heavy large frying pan over medium heat. Add the chicken and brown on all sides for about 7 minutes. Transfer to a plate.
    2. Add the onion and garlic to the same frying pan and sauté for about 6 minutes, or until translucent. Stir in the curry powder. Return chicken to pan. Add the apple, celery, red pepper, sultanas and stock. Season with salt. Cover and simmer for 10 minutes, or until the sauce thickens. Serve with rice.

    ive made this about 10 times over the last few months,and all i can say is"its great!"i cook it for a little longer to reduce the sauce,but its fantastic!its also soooooo easy!if you like indian food but aren't very expierienced with cooking it,THIS is a great dish to start with! i cook lots of indian food,and this honestly stands up there with some of the tastiest,and most complex dishes i cook! top notch nosh!  -  13 Jul 2012


    Very easy to make and yummy. The only alteration i made was to add a bit of flour to thicken the sauce up cause it was very watery.  -  04 Jun 2012


    Just made this tonight and it was delicious!!! Unfortunately I didn't have the sultanas but it was just as tasty. I can't wait to make it again  -  31 Jan 2012
