1 onion, sliced
4 garlic cloves, minced
3 tablespoons curry powder
1/2 apple, diced
1 stalk celery, chopped
1/2 red pepper, chopped
75g (3 oz) sultanas
500ml (17 fl oz) chicken stock
salt to taste

Melt butter in a heavy large frying pan over medium heat. Add the chicken and brown on all sides for about 7 minutes. Transfer to a plate.
Add the onion and garlic to the same frying pan and sauté for about 6 minutes, or until translucent. Stir in the curry powder. Return chicken to pan. Add the apple, celery, red pepper, sultanas and stock. Season with salt. Cover and simmer for 10 minutes, or until the sauce thickens. Serve with rice.
ive made this about 10 times over the last few months,and all i can say is"its great!"i cook it for a little longer to reduce the sauce,but its fantastic!its also soooooo easy!if you like indian food but aren't very expierienced with cooking it,THIS is a great dish to start with!
