Spicy bacon arrabiata

    A hot n'spicy twist on the classic Italian arribiata sauce. The sauce is a tasty tomato sauce with bacon. Enjoy with a glass or two of red wine.

    Serves: 4 

    • 10 slices good quality streaky bacon
    • 1 medium onion
    • 1 clove garlic
    • 2-3 chopped birds eye chillies or 1 tablespoon hot dried chilli flakes
    • 1 tin peeled plum tomatoes
    • penne or spaghetti for 4
    • salt and pepper to taste
    • grated cheese

    1. Cut the bacon into 2.5cm strips and fry gently in a saucepan.
    2. Meanwhile, finely chop the onion and garlic.
    3. Remove the bacon when just cooked, keeping the fat to cook the onion, chilli and garlic. Gently cook the onions, chilli and garlic until the onions are translucent.
    4. Increase the heat to high and add the tinned tomatoes. Keep stirring the sauce and cook over high heat, until sauce is reduced by half.
    5. Finely chop the already cooked bacon and add it to the sauce. Continue to cook over a high heat, stirring all the time, until the sauce has thickened. Season to taste.
    6. Cook preferred pasta in a large saucepan with lightly salted water until al dente. Drain and add to the sauce.
    7. Finally, sprinkle over your favourite grated cheese.
