Baked kolhrabi

    I had some sort of kohlrabi dish while on holiday in Germany and this is the result of me trying to figure out that amazing flavor.

    Serves: 2 

    • 1 kolhrabi, peeled and chopped
    • 1 leek, chopped
    • 60ml (4 fl oz) oil
    • 1 teaspoon ground black pepper
    • 50g (2 oz) ceasar salad dressing
    • 1 tablespoon shredded Parmesan, more for garnish
    • 50g (2 oz) goat cheese, diced

    1. Preheat oven to 220 C / Gas 7.
    2. Combine kohlrabi and leeks in a pan with oil and saute until tender.
    3. In a bowl mix remaining ingredients with cooked ingredients. Place in an oven safe dish (glass, iron, or ceramic only).
    4. Cook for 15 minutes in the preheated oven, until lightly browned.
    5. As an added garnish add a little more Parmesan cheese on top.


    This is a seriously unhealthy dish but it is strangely tasty when the timing is right.

    Parmesan cheese

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
