Valencian chicken

    This is an easy to make chicken stew recipe from Spain with green peppers, rice and tomato sauce. A great one pot meal for the whole family.

    Serves: 4 

    • 5 tablespoons butter or margarine
    • 2 onions, chopped
    • 2 green peppers, diced
    • 500ml water
    • 1.4kg (3 lbs) chicken pieces
    • 2 teaspoons salt
    • 1.5 teaspoons black pepper
    • 200ml tomato sauce
    • 200g uncooked rice

    1. Melt butter in a large saucepan, saute the onions and green peppers until the onions are translucent.
    2. Add water, chicken, salt, black pepper, and tomato sauce and bring to the boil, reduce heat and simmer for 30 minutes.
    3. Stir in the rice, cover and simmer for another 30 minutes, or until the chicken and rice are tender.
