Mum's chicken and potato curry

    An easy, tasty chicken curry that my mum used to make all the time.

    Serves: 4 

    • 1 tablespoon oil
    • 1 onion, chopped
    • 1 teaspoon chilli powder
    • 1 teaspoon salt
    • 1/4 teaspoon turmeric
    • 1 or 2 tomatoes or 1 or 2 tablespoons tomato puree
    • 2 or 3 chicken breasts, sliced into small cubes
    • 2 or 3 potatoes, quartered or cubed
    • 250ml water
    • fresh coriander leaves, chopped

    1. Heat the oil in a large pan; add the onion and fry until golden brown. Add chilli powder, salt and turmeric. Stir in tomato or tomato puree. Add chicken pieces and potatoes. Pour in water.
    2. Cook on medium heat for 15 minutes. You can add more water, if needed, during cooking time.
    3. Turn heat down to low and cook for a further 5 minutes, or until potatoes are cooked.
    4. Sprinkle fresh coriander leaves on top and serve.
