Quick curry-style chicken

    Delicious to eat with a dollop of white yoghurt on top and pitta bread or rice on the side. This recipe is one of my own inventions. On a busy day, when I need something quick and nutritious for the family to eat, this is the one I make.

    Serves: 4 

    • 2 teaspoons olive oil
    • 1 medium red onion, diced
    • 1 (2cm) piece fresh ginger, peeled and grated
    • 4 cloves of garlic, peeled and grated
    • 400g chicken breast, cut into cubes
    • salt and pepper to taste
    • 3 teaspoons dark soya sauce
    • 1 teaspoon ground cumin
    • 1 teaspoon sweet paprika powder
    • 1 teaspoon oregano
    • 2 medium tomatoes, diced

    1. Heat the oil in frying pan. Add the red onion, ginger and garlic and fry on low heat for 2 minutes.
    2. Add chicken, salt, soya sauce, cumin, paprika and oregano. When the chicken has browned slightly, add tomatoes and cook over a low heat for another 10 minutes, or until chicken is cooked through.
