About this recipe:Delicious to eat with a dollop of white yoghurt on top and pitta bread or rice on the side. This recipe is one of my own inventions. On a busy day, when I need something quick and nutritious for the family to eat, this is the one I make.
2 teaspoons olive oil
1 medium red onion, diced
1 (2cm) piece fresh ginger, peeled and grated
4 cloves of garlic, peeled and grated
400g chicken breast, cut into cubes
salt and pepper to taste
3 teaspoons dark soya sauce
1 teaspoon ground cumin
1 teaspoon sweet paprika powder
1 teaspoon oregano
2 medium tomatoes, diced

Heat the oil in frying pan. Add the red onion, ginger and garlic and fry on low heat for 2 minutes.
Add chicken, salt, soya sauce, cumin, paprika and oregano. When the chicken has browned slightly, add tomatoes and cook over a low heat for another 10 minutes, or until chicken is cooked through.
