About this recipe: Delicious, moist coffee cupcakes! Perfect as a light snack and perfect with a cup of coffee! Use your favourite frosting and decorate to your liking.

Makes: 12 cupcakes

  • 75g butter or margarine
  • 75g sugar
  • 2 eggs
  • 75g self-raising flour
  • 1/2 and 1/4 teaspoon baking powder
  • 1 tablespoon boiling water
  • 1 tablespoon coffee granules

  1. Preheat oven to 180 C / Gas 4. Put 12 medium cupcake cases in a 12-hole cupcake tin.
  2. Beat butter and sugar until pale and creamy. This will take only a few seconds.
  3. Lightly whisk the eggs in a mug. Gradually add them to the mixture. Add flour a tablespoon at a time whilst beating. Beat in baking powder.
  4. Dissolve the coffee granules in boiling water and fold in gently.
  5. Using a tablespoon, add mixture equally in the twelve cupcake cases.
  6. Bake them in the oven for 15 minutes and let it cool for 5 to 10 minutes.
  7. Enjoy with a nice cup of coffee!


If you would rather make a cake, double cooking time to 30 minutes. Also, if you don't have any cupcake cases, grease the cupcake tins with butter or margarine.

Made these last week, read what someone else had said about only making 6, so doubled up on ingredients, and they were perfect. Topped mine with caramel icing, yummy. Hubby took some into work, and have been asked to make some for his work colleagues house warming party at the end of the month - 12 Mar 2016
