    About this recipe: My very own version of egg fried rice with pork, carrots, peppers and broccoli! Totally delicious and extremely easy to make!

    Ingredients
    Serves: 4 

    • 300g basmati or jasmine rice
    • oil for frying
    • 300g pork, cubed
    • 1 onion, chopped
    • 2 garlic cloves, crushed
    • 1 carrot, cubed
    • 1 green pepper, cubed
    • 1 yellow pepper, cubed
    • 2 eggs
    • 5 broccoli florets, cut into small pieces
    • 4 tablespoons soy sauce
    • 2 tablespoons lemon juice
    • salt and pepper to taste

    Method

    1. In a saucepan cook rice as instructed on the package. Set aside to cool a bit.
    2. In a wok, or a big frying pan add a few tablespoons oil and fry cubed pork for about 4 minutes. Add onion and garlic and stir. Cook for 1 minute.
    3. Add the rest of the veggies except the broccoli and stir. Cook together for 3 minutes.
    4. In a separate pan add some oil and fry the eggs, scrambling them as they go. When cooked add to wok and mix with everything.
    5. Add broccoli, rice, soy sauce, lemon juice and season with salt and pepper to taste. Cook for a while longer, until heated through and broccoli is tender.

    Tip

    In the spring, spring onions are great in this recipe as well as cabbage and basically any vegetable you like! Mini corn or bamboo shoots suit this dish as well!
