Mango mascarpone layered dessert

    A delightfully light summer dessert that is scrumptious and looks lovely if you layer it in a fancy glass.

    Serves: 3 

    • 1 small pot Greek yoghurt with honey
    • 250g mascarpone cheese
    • 1 teaspoon vanilla extract
    • 1 tablespoon brown sugar
    • 1 tablespoon freshly squeezed lemon juice
    • 2 ripe mangoes

    1. Mix together the Greek yoghurt, mascarpone, vanilla extract, brown sugar and lemon juice.
    2. Peel mangoes; reserve 3 pieces of mango for decoration. Chop and puree the remaining mango.
    3. Spoon alternating layers of the yoghurt-mascarpone mixture and mango puree into three individual dessert glasses. Decorate with a piece of mango on top.
