Southeast chicken salad

    This is a traditional southeastern USA chicken salad recipe typically served on crackers, toast, or a flour wrap. Avoiding the addition of any fruit is key in this style of chicken salad.

    • 3 deboned chicken thighs
    • 1/4 onion, finely chopped
    • 1/4 teaspoon ground coriander seed
    • oil for frying
    • 1/2 celery stick
    • 6 tablespoons mayonnaise
    • 1/2 teaspoon dill
    • 1/2 ground black pepper
    • salt

    1. Preheat pan to medium heat, add chicken thighs and cover. Only remove cover once to flip chicken halfway through cooking and cover again until done. Once cooked, finely chop chicken and set aside.
    2. Lightly cook onion and ground coriander seed in oil on low heat until translucent, do not brown onions. Remove and place on a paper towel to remove the oil.
    3. Finely slice celery stalk and combine with cooked chicken and onion in a medium bowl. Add mayonnaise, dill, pepper and salt to taste and mix.


    I love to add curly leaf lettuce in a flour tortilla with this chicken salad mix.
