Blackberry sauce

    A quick and easy blackberry sauce, perfect to accompany some vanilla ice cream on a hot summer's day.

    Serves: 4 

    • 500g frozen blackberries
    • 40ml dark rum
    • 2 tablespoons caster sugar, more to taste

    1. Rinse the frozen blackberries, drain well and place into a small saucepan over medium heat. Pour over the rum, stir and cook until blackberries become soft. Add sugar to taste and let cool.
    2. Purée the blackberry sauce in a blender or with an handheld liquidiser. Press through a sieve to remove the seeds and serve hot or cold with ice cream or add into your favourite milk shake.
