Salmon fillet with dill sauce

    This fillet of salmon with dill sauce is delicious any time of the year, hot or cold, for lunch or dinner, and can be dressed up or down depending on the occasion. The delicate flavours of the salmon are highlighted by the softness of the dill.

    Serves: 2 

    • 300g salmon fillet
    • 1 tablespoon butter
    • 2 garlic cloves, crushed
    • 400ml single cream
    • 1 tablespoon lemon juice
    • 1/2 teaspoon ground nutmeg
    • 2 tablespoons fresh dill, chopped
    • salt and pepper, to taste

    1. Preheat oven to 180 C / Gas 4. Grease an ovenproof casserole dish.
    2. Arrange the salmon fillets in the prepared casserole dish.
    3. In a frying pan, melt the butter and cook and stir the garlic briefly but do not allow to brown. Pour in the cream and stir well. Bring to the boil then remove from the heat and stir in lemon juice, nutmeg and dill. Season with salt and pepper to taste and pour the sauce over the salmon.
    4. Bake in the preheated oven for 30 minutes until the salmon is pink and flaky.
